The most famous of the Corfu dishes, traditionally made with rooster.
in this case with very lean and tender beef which i cooked very slowly in a fresh herb tomato sauce, we serve it with rigatoni pasta which we cook in the meat juices and finally we sprinkle Kefalotyri on top ( the Greek version of Parmesan ) !
